Today, I want to share with you a recipe for a mouthwatering dish called Kabuli pulao. This Afghan rice dish is packed with flavors and aromas that will leave your taste buds begging for more.


To make Kabuli pulao, you will need the following ingredients:


- 2 cups of basmati rice

- 1 pound of lamb or beef, cut into cubes

- 1 large onion, finely chopped

- 1/2 cup of cooking oil

- 1 cup of julienned carrots

- 1 cup of raisins

- 1 teaspoon of ground cardamom

- 1 teaspoon of ground cumin

- 1 teaspoon of ground cinnamon

- Salt to taste


Now that we have our ingredients ready, let's move on to the cooking process. Follow these simple steps to prepare a delicious Kabuli polaw:


Step 1: Rinse the rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.


Step 2: In a large pot, heat the cooking oil over medium heat. Add the chopped onions and sauté until they turn golden brown.


Step 3: Add the meat cubes to the pot and cook until they are browned on all sides. This will help seal in the flavors and ensure the meat stays tender.


Step 4: Add the ground cardamom, cumin, and cinnamon to the pot and stir well to coat the meat and onions with the spices.


Step 5: Add enough water to cover the meat and bring it to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the meat is tender.


Step 6: While the meat is simmering, bring a large pot of salted water to a boil. Add the soaked and drained rice and cook it until it is 70% cooked. It should still have a slight bite to it.


Step 7: Drain the partially cooked rice and set it aside.


Step 8: In a separate pan, heat a tablespoon of oil and sauté the julienned carrots until they are slightly softened.


Step 9: In the same pan, add the raisins and cook for a few more minutes until they plump up.


Step 10: Layer the partially cooked rice over the meat in the pot. Top it with the sautéed carrots and raisins.


Step 11: Cover the pot with a tight-fitting lid and cook on low heat for about 30 minutes. This will allow the flavors to meld together and the rice to fully cook.


Step 12: Once the rice is fully cooked, remove the pot from the heat and let it sit for a few minutes to allow the flavors to settle.


Step 13: Fluff the rice with a fork, making sure to mix in the meat, carrots, and raisins.
