How to cook samosa
Samosa is a popular Indian snack that is loved by people all over the world. This delicious and crispy triangular pastry is filled with a savory mixture of potatoes, peas, and spices. If you have always wanted to try making samosas at home, then you have come to the right place. In this article, we will guide you through the process of making samosas from scratch.
To start with, let's gather all the ingredients needed for making samosas. You will need:
- 2 cups of all-purpose flour
- 2 tablespoons of vegetable oil
- 1/2 teaspoon of salt
- 1/2 cup of water
- 2 large potatoes, boiled and mashed
- 1/2 cup of green peas, boiled

- 2 green chilies, finely chopped
- 1 teaspoon of ginger-garlic paste
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of garam masala

1. In a mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Gradually add water and knead the dough until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for about 30 minutes.
2. While the dough is resting, let's prepare the filling for the samosas. Heat some oil in a pan and add the cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Saute until the onions turn golden brown.
3. Add the ginger-garlic paste and cook for a minute. Then, add the boiled and mashed potatoes, boiled peas, coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for a few minutes until the flavors blend together. Remove the filling from the heat and let it cool.
4. Now, it's time to shape the samosas. Take a small portion of the dough and roll it into a thin oval shape. Cut it in half to form two semi-circles. Moisten the straight edges of the semi-circle with water and bring the two ends together to form a cone shape. Fill the cone with the prepared potato filling and seal the top edge by pressing it gently.
5. Repeat the process with the remaining dough and filling until you have made all the samosas.
6. Heat oil in a deep pan or kadhai for deep frying the samosas. Once the oil is hot, carefully slide the samosas into the oil and fry them on medium heat until they turn golden brown and crisp. Remember to fry them in batches to ensure even cooking.
7. Once the samosas are cooked, remove them from the oil and place them on a paper towel to drain excess oil.
